after making my single layer chocolate cake with a malted milk swiss meringue buttercream and salted caramel puddles a few months ago i’ve kept thinking about how much i love the taste of malted milk. after much umm-ing and ahh-ing i landed on the idea of something like a vanilla pound cake with the flavour of malted milk. this took me quite a bit of testing, so apologies for the slight lack of pace in publishing this recipe! however, it was worth the tweaking. the final cake features a tender sponge sandwiched together with a sweet and gentle ganache and jam.
