i used to really not love mince pies, in fact last christmas was the first that i really started loving them. that’s all because i tried one made by a friend of mine who is a very, very good baker. this year he kindly gave me a batch of his mincemeat which i raced through. once that was used up i made a quick mix of my own which is detailed below. you’ll also find instructions for a wholemeal shortcrust pastry which i think tastes beautiful with the boozy, spiced flavours of the mincemeat. i like mine best with brandy cream but any cream or ice-cream is delicious.
