lately i have been really craving a cookie that is a little more umptuous and thicker than a classic chocolate chip cookie. i thought about making a levain style cookie but that wasn’t quite what i wanted. the recipe below is loosely inspired by my forever favourite ccc recipe by ravneet gill. this recipe is a classic buttery, brown sugar, salty mix with earthy flavours from the addition of rye flour and hazelnuts. the extra special delight is a delicious blob of hazelnut crème right in the centre and across the top of each cookie.
