chocolate mousse is one of my favourite desserts. over the years i’ve tried many recipes, this one is inspired by raymond blanc and will generously serve two people. it’s a lovely and light yet rich mousse and the edition of the crème fraîche, amarena cherries, olive oil and salt make it a little extra special.
